Marshmallow Recipe(A)240g sugar240g glucose (corn syrup)90g water(B)15g gelatine180g water(C)60g egg whitesWhisk egg whites to a stiff foam (C). (A) boil these ingredients to 127 degrees Celsius , (B) Dissolve the gelatine and water with a little heat. Remove boiling sugar from the heat, plunge pan into cold water to cool the syrup and then pour onto the whisking whites. Add the gelatine solution and continue whisking until the mixture becomes thick. Use immediately before the mixture sets, store in a cool place. Dust the container with corn flour and icing sugar to prevent sticking.I added pink colour and rose water to mine - Enjoy!
